Griddled courgette salad
Ingredients:
2 medium courgettes, sliced into 2cm pieces
Olive oil
1 jar roasted peppers
1 Big handful of rocket
50g pine nuts
1tsp Fresh lemon thyme leaves
Small handful red amaranth (optional)
1tbsp white wine vinegar
Method:
- Place a griddle pan over a medium heat. In a bowl toss the courgette slices in olive oil and season with a little salt.
- Cook the courgette slices until they have nicely charred on both sides and leave to cool in a mixing bowl.
- Now add the pine nuts to the griddle pan, once toasted add the courgettes.
- Drain the peppers, slice and add to the bowl. Keeping 2-3 tbsp of the liquid back for dressing.
- Add the rocket and thyme leaves.
- Pour over the reserved pepper water and white wine vinegar. Give all the ingredients a mix and place into a serving bowl.

Salmon and courgette kebabs with rose harissa
Ingredients:
6oog salmon
2tbsp olive oil
2tbsp rose harissa
Small handful chopped parsley
Zest of 1 lemon
2 medium courgettes
Method:
- Take 8 wooden skewers and soak for 30 minutes in water.
- Cut the salmon into 4-5cm chunks and place into a bowl.
- Cut the courgettes into a similar size as the salmon and add to the bowl.
- Add all the other ingredients and toss everything together. Thread the salmon and courgette onto the skewers.
- Cook either on a hot bbq or under a hot grill for about 10 minutes, turning every so often.

Carrot and courgette rosti, poached egg and yoghurt dressing
Ingredients:
1 medium courgette
1 medium carrot
1 medium potato
3 large eggs
1tbsp plain flour
½ tsp baking powder
4 tbsp vegetable oil for frying
3tbsp Greek yoghurt
1tbsp chopped mint and coriander
¼ tsp chilli flakes
Rocket
Method:
- Coarsely grate the courgette, carrot and potato. Place into a clean t-towel and squeeze out any excess water. Place into a bowl.
- Add 1 of the eggs, flour, baking powder and season with salt and pepper. Mix well.
- For the yoghurt dressing, simply mix the yoghurt, mint and coriander with the chilli flakes and a pinch of salt.
- Divide the rosti mix into 4 balls and then flatten to from a rough patty.
- Warm the oil over a low-medium heat in a non-stick frying pan, when hot, cook the rosti until golden and crisp, flip and cook on the other side until crisp and golden. Drain on kitchen roll.
- Whilst the rosti are cooking poached your eggs until soft.
- Place the rosti on to serving plates, top with a poached egg. Spoon over the yoghurt dressing and serve with some dressed rocket.
- Serve on a Denby Impression platter

Summer cordial punch
Ingredients:
Ice
Strawberries
Cucumber
Lemon
Elderflower cordial
Grenadine
Lemonade
Method:
For a really refreshing drink on a hot summer day. Take a glass and add some ice, a few sliced strawberries and ribbons of cucumber. Squeeze in the juice of ½ lemon, add 25ml elderflower cordial, 25ml grenadine and top with lemonade.
