Summer Recipes from Denby

Summer is here and it’s time to enjoy some Summer food in the sun. Denby have created a Prawn & Chorizo Skewer recipe and two delicious drinks to enjoy with family and friends.

Prawn & Chorizo Skewers

A quick, easy and colourful recipe for you to enjoy on the barbecue this summer.

Ingredients

•300g chorizo
•16 large prawns
•2 tbsp olive oil
•2 tbsp lemon juice •1/2teaspoon dried min •Slices of lemon to serve

Method

•Chop the chorizo into chunks similar in thickness to the prawns
•Add the chorizo, prawns, olive oil, lemon juice and mint to a bowl and toss to mix the ingredients thoroughly •Set aside at room temperature for 30 minutes
•Preheat the barbecue, if using a griddle pan do not put over a direct flame
•Arrange the chorizo pieces, prawns and tomatoes onto each skewer
•Cook the skewers for 3-4 minutes on each side (or until cooked)
•Serve with lemon

Lemongrass Gin Cocktail

To serve 2, you will need:

•3 lemongrass stems (use one to garnish)
•1/4 tsp ground ginger
•1oz agave nectar (or simple syrup)
•2oz gin
•2oz ginger ale

Method

  • Cut the lemongrass stem into small pieces and add to a cocktail shaker along with the ginger, agave nectar gin and lime juice
  • Shake vigorously until all the ingredients are combined
  • Strain into a large Denby gin glass with ice and top off with ginger ale
  • Garnish with a lemongrass stem and enjoy! serve in a Denby Gin glass.

Blackberry Bellini

Serves 4
you will need:
•3oz fresh blackberries
•1 tbsp sugar
•750ml champagne or prosecco •Your choice of garnish

Method:
Add the blackberries and sugar to a blender and puree until smooth
Let the puree sit for 2 minutes to enhance the flavour
Press the puree through a fine-mesh sieve to remove the seeds and the majority of the fruit pulp Split the blackberry puree equally into 4 Denby Natural Canvas champagne flutes
Fill the glasses with champagne or prosecco
Garnish and serve!
